@mamaknowsnutrition: Sweet potato shockingly makes great dairy free ice cream (and just so happens to be way better for you)! I saw someone make an ice cream sandwich with @lundbergfarms rice cakes and thought it would add the perfect crunch— and it does! 1 medium sweet potato 1/4 cup cocoa powder, unsweetened 3 tbsp maple syrup 1 tbsp almond butter 1 tsp vanilla extract 1/8 tsp sea salt Mini chocolate chips 2 Lundberg Farms lightly salted brown rice cakes Cook sweet potato until soft (I microwaved for 4 minutes). Let cool. Scoop sweet potato flesh and other ingredients through sea salt into food processor or high power blender. Blend. Scoop evenly onto two rice cakes and top with chocolate chips.
