@clairehodginss: Thai Peanut Quinoa Salad that is perfect for meal prep! 🥗😋 I love making a few meals at the beginning of each week because it saves so much time and helps me eat healthier! You can keep these in the fridge for a quick high protein lunch or dinner 🙌🏼 Makes 2 servings: ~426 calories, 37g protein, 42g carbs, 13g fat each For the bowls: - 1/2 cup dry quinoa - 1 cup water to cook quinoa - 1 chicken breast - 1 tbsp soy sauce - 1/2 tsp toasted sesame oil - 1/2 tsp garlic powder - 1 cup shredded purple cabbage - 2 shredded carrots - 1 thinly sliced bell pepper - 2 diced green onions - 1/4 cup chopped cilantro leaves For the peanut ginger dressing: - 3 tbsp soy sauce - 2 tbsp lime juice - 1 tbsp honey or maple syrup - 1/2 tsp sesame oil - 2 tbsp peanut butter - 1/2 tsp minced garlic - 1/2 tsp minced ginger - 1/2 tsp sriracha (adjust to taste) Let’s make it 👇🏻 - Add quinoa and water to pot, bring to a boil, and simmer until all water is absorbed - Toss chicken breast in soy sauce, sesame oil and garlic powder.
