@bakedbynech: Caution 🚧 This fig-infused croissant might not be ready this week. Still a work in progress. I used fig jam as the base, but it turns out fig jam is packed with pectin. Once the dough rises, the pectin turns it into jelly 😩 Not ideal. My next move is either making my own fig jam or just using fresh figs. Honestly, the fresh fruit sounds way better 🍃 but I’m not sure if it’ll give the dough enough fig flavor. Have you tried figleaf? you could infuse the liquid for the dough, with that over night. Then use fresh figs.
