Cheesy chicken quesadillas 👏🏼 Don’t settle for a soggy fakeaway - bring the ultimate crispy, cheesy, flavour town quesadillas to your own kitchen. @Perfect Italiano MU Perfect Mexican gives you that tasty and melty finish, great for Mexican inspired dishes, taking your homemade fakeaway to the next level.  For the filling: 2 chicken thighs, sliced ½ tsp each: paprika, garlic powder, onion powder, cumin, salt 1-2 tbsp chipotle peppers in adobo 1 tbsp olive oil, plus extra for cooking ½ onion, thinly sliced ¼ green capsicm, thinly sliced (I used 1 Green banana pepper) 1 tbsp lime juice 125g corn kernels, drained 1 handful chopped coriander The sauce: ½ cup Greek yoghurt (optional: add 2 tbsp sour cream) ¼ cup pickled jalapenos + 1 tbsp brine 1-2 tbsp chipotle peppers in adobo To assemble: Flour Tortillas Oil for greasing Perfect Italiano Perfect Mexican - a great blend of Mozzarella, Red Cheddar and Colby Cheeses Coriander for garnish Marinate the chicken in paprika, garlic powder, onion powder, cumin, salt, chipotle in adobo, and olive oil. Set aside for 15 minutes.  Meanwhile, blend all sauce ingredients until smooth and refrigerate.  Heat a pan over medium heat with a little oil and cook the chicken for 2-3 min. Add the onion and capsicum, then stir in lime juice and corn. Cook until everything is tender and well combined, then set aside. Taste and adjust seasoning. In a greased pan over medium heat, warm a tortilla, sprinkle over cheese, add the chicken filling and some chopped coriander. Fold in half and cook until golden and crisp on both sides. Serve hot with the chipotle yoghurt sauce and extra coriander. Enjoy. #AD #quesadilla #cheese
