The salt doesn’t just affect the taste it causes a chemical reaction while baking. If you didn’t add salt you would just be baking sourdough starter

Another way, you can add salt, but not mess with the fermentation. I mean additional salt is to add it like you would inclusions when you’re shaping so that that’s a thought too.

another thing you could try is swap the salt. i see you’re using a pink salt, probably himalayan pink salt? it has roughly the same sodium content in a tbsp when finely ground but the flavor profile is different due to specific minerals, moisture etc you can try playing with different type of salts to see if you feel a difference. at the restaurant i worked in we used sea salt, it was nice

I accidentally left the salt out of the loaf, it looked beautiful, but it tasted like school paste so learned my lesson. I actually set an alarm on my phone to make sure I put my salt in on my first stretch and fold. Does she like perhaps a coding of like pretzel salt or flaky sea salt on the outside of the crust?

we have the salty herb mixes for breads or adding to oil for dipping that I laminate in for when we feel we'd like something extra. otherwise it's right at 2%. I do crave the salty extra on occasion 😋
