Brownie Ice Cream Sandwiches 🍫🍦 - Ingredients: - 150g dark chocolate (i used 50% cocoa) - 100g unsalted butter - 80g granulated sugar - 80g light brown sugar - 2 large eggs - 1 teaspoon vanilla extract  - 60g all-purpose flour - 25g cocoa powder - A pinch of salt - 50g milk chocolate chips - 50g semi sweet or dark chocolate chips Extras: - 1 kg Vanilla ice cream Instructions: 1. Preheat your oven to 170•C (fan setting), line two 20cm baking tins with parchment papaer. Set aside. 2. Melt the chocolate and the butter together (you can do this in a saucepan or over a double boiler). Let it slightly cool. 3. In a large bowl beat together the eggs, the brown sugar and the granulated sugar until fluffy and pale in color. I recommend using a hand mixer. 4. Pour in the chocolate-butter mixture along with the vanilla and mix until incorporated. 5. Sift in the cocoa powder, flour and salt. Mix gently with a spatula until combined. Do not overmix. 6. Lastly fold in the chocolate chips. 7. Divide the batter equally between the two baking tins and bake in the preheated oven for 15 minutes. 8. Once ready, take them out the oven and let them cool. 9. Once cool, gently place one of the brownies back into the (deep) baking tin.  10. Scoop the ice cream on top and spread it out evenly. (Make sure the ice cream is scoopable and not rock hard) 11. Lastly, gently place the second brownie on top. 12. Cover tightly with plastic wrap and place it in the freezer for minimum 3 hours to overnight. 13. Before cutting, take it out the freezer and let it sit at room temperature for 15 minutes. You can also warm the knife up under hot water. 14. After cutting, cover each one individually in plastic wrap and place in the freezer for up to one month. 15.
