Makes 4: 1 red pepper (chopped) 1 green pepper (chopped) 1 red onion (chopped) 415g raw sweet potato (cubed) 494g raw chicken breast (cubed) 15ml olive oil 100g Tenderstem broccoli 40g light cheddar 1 packet fajita seasoning 1. Start by cutting your chicken into small chunks and covering with the fajita seasoning then setting to the side while you chop the veg. 2. Add 10g of olive oil to a frying pan and heat over a medium heat, then add the chicken and cook until pretty much cooked. Then add the peppers and red onion and stir well, cook until softened. 3. Cover the chopped sweet potato in the rest of the olive oil and cook for 20 mins at 200C in the airfryer. 4.
