The company I work for makes chemicals for the semiconductor industry. The water we make is incredibly pure. I have wondered what it tastes like.

Even purer than distilled water is deionized water. All minerals, all ions, everything stripped out down it's basic H,2, and O. We use it to proof down alcohol since it adds absolutely nothing to the product.

I use RO/DI water when diluting spirits from 90% to 45% so the water doesn't impart flavor into the batch. But I don't like the idea of using distilled water because of its complete lack of minerals and sterile aesthetic while RO/DI water still lets a bit through. I'm interested in your thoughts on this.
