The answer is ‘it depends’. If you put a giant pot of hot soup in the fridge it can raise the temp of the raw meats and cause those to be in the danger zone. Cool your leftovers from 135 to 70 degrees in 2 hours and 40 degrees in 4 hrs

Most of the heat is lost in the first 10 minutes, so let it cool for 10 minutes, then put it in the fridge. Simple solution.

Put the containers in the fridge with the lid turned sideways. In an hour go close it. If you’re cooling sauces, use a pan no deeper than 2 inches. Don’t trap steam inside the container.

The hot food will release steam which causes moisture inside of the container, which can then potentially cause bacteria to multiply. It’s better to let it come to room temp first or at least close to it
