Spiced Lamb & Mozzarella Shakshuka 🔥 Ingredients: (serves 2–3) - 250–300g spiced lamb mince (or plain mince + spices like cumin, paprika, coriander, cinnamon, chili) - 2 bell peppers, sliced - 3 spring onions, finely sliced - 2 garlic cloves, minced - 1 tin chopped tomatoes (400g) - 1 tbsp tomato paste - 1 tsp smoked paprika (optional, to deepen flavour) - ½ tsp ground cumin (optional if your lamb is already spiced) - 2–3 eggs - 100g mozzarella, torn into chunks - Small handful fresh parsley, chopped - Olive oil - Salt & black pepper Method Heat a pan (cast iron if you’ve got one) with a little olive oil. Brown the lamb mince until crispy around the edges. Remove and set aside. In the same pan, add sliced peppers and cook until softened and slightly charred. Add garlic and spring onions, cook for another minute. Stir in tomato paste, chopped tomatoes, and spices. Season with salt & pepper. Let it bubble away for 10 minutes until thickened. Stir the lamb back into the sauce. Make 2–3 little wells and crack in your eggs. Scatter mozzarella chunks over the top. Cover with a lid and cook gently until the eggs are set but still a little runny. Finish with fresh parsley and extra spring onion.
