@chefjjskitchen: Tahiri @canarybasmati Ingredients: - 2 onions - 10 chilies - 3 tomatoes - 1 kg lamb pieces bone in - 2 cups of basmati rice - 4 tbsps ghee - salt to taste - 1 tbsp ginger paste - 1 tbsp garlic paste - 1 tsp turmeric - 1 tsp chili powder - 4 cardamom pods - 2 cinnamon sticks - 3 bay leaves - 3 cloves - 5 to 6 cups of water - start by thinly slicing the onions. The chilies and cube the tomatoes. - sauté the onions in 2 tbsps of ghee till they wilt and take a golden color for about 5 minutes. - add the ginger and garlic paste. The lamb and spices. Then sear everything on high for 5 minutes till the aroma fills the kitchen. - add the water and let the lamb cook on medium for about an hour and a half or till nice and tender. - meanwhile wash and soak 2 cups of @canarybasmati for 30 minutes in Luke warm water. Basically hot but you can touch it with your hands. - once the meat is tender. Add the tomatoes. Chilies and the soaked rice to the pot. If the water level is too low just add enough water to be a finger tip above the rice. - let it boil uncovered for 6-7 minutes till you see the rice blooming and soaking the stock. Then drop the heat to the lowest possible. Cover and let it cook for 30 minutes. - leave the lid shut for another 20 minutes to get a nice fluffy rice. - gently scoop the rice and lamb on a serving plate. Top it with the larger lamb pieces. The tomatoes and chilies. Serve it with a side of raita and enjoy. #food #cooking #india #indianfood #spicy
It's not indian and it’s not call Tahiri rather it’s called 'Teheri'. At the same time this is not the original recipe. 'Teheri' is a traditional Bangladeshi 🇧🇩 dish makes with mutton/beef and 'Kalojira/Chinigura arometic rice'. In Teheri mustard oil is must.It's not like biriyani and It's not make with 'Basmati rice'. Teheri is less spicy then Biriyani and has a creamy texture for using milk insted of water. 🇧🇩🇧🇩

there is one more version native to my place in India, the difference is we use green tomatoes(preferred) black pepper whole,coriander leaves and mint leaves chopped,green chillies, dry fenugreek leaves and green chilli paste instead of red chili powder, for rice we mix half a cup of red lentils and we wash and cook with the broth no soaking required, once the water comes to boil, add juice of 2 lemons, and teaspoon of garam masala.
