An idea for you to eat your veggies in a delicious way!!! 🤤 Ingredients needed: - 1 or 2 zucchinis, thinly sliced - 4 eggs - Salt, turmeric, and black pepper to taste - Previously cooked chicken (or sautéed mushrooms for a vegetarian version) - Your preferred cheese (2 handfuls) - 1/2 onion, sliced into rings - 1 tomato, sliced - Olive oil or coconut oil for greasing Instructions: 1. Preheat the oven to 150 °C (for slower baking) or 180 °C (for faster baking). 2. Grease a rectangular glass baking dish with olive oil, coconut oil, or butter. 3. Line the bottom and sides of the dish with thin zucchini slices. Add two layers on the bottom and arrange the side slices to hang over the edge, like curtains (as shown in the video). 4. In a bowl, beat the eggs with salt, turmeric, and black pepper. Add the cooked chicken (or sautéed mushrooms) and cheese. Mix well. 5. Pour the mixture into the zucchini-lined dish. 6. On top, distribute the onion and tomato slices, and finish with a bit more salt and a sprinkle of cheese. 7. Close the tortilla by folding the zucchini “curtains” over the top to cover the filling. 8. Bake in the oven at 150 °C for 55 minutes or at 180 °C for about 45 minutes. (It’s normal for the zucchini to brown well on top — don’t worry!) 9. Once baked, remove from the oven, let it rest for a few minutes, and flip the dish onto a plate to unmold. 10. Slice and enjoy this delicious tortilla — perfect warm or cold!
