I think the only way they'd actually be able to eat humans is if they grew over a coffin or a grew over something similar with a dead person inside, making it the person that be consumed by the tree. I don't think they could just consume a person, like how people eat vegetables or meat, because it takes a while for a tree, to grow and be able to embody something and its own mass.
