@pov_husband: What do you think I should've done differently here? I saw that the tonkotsu broth is typically made using larger pork leg bones which I was not able to find. Maybe if I would've used that and added ginger, I would've got the whiter creamer texture and flavor I was looking for. Overall, a good first try with the chashu being surprisingly good.
Hi former ramen chef from Japan here. Try use pork knuckle for the base. And loin bone(back bone) also helps u to make good ramen.

Black garlic is purchased as black garlic from the store, it’s a fermented garlic. I think maybe that’s burned garlic sauce based on what I see. Just if it didn’t turn out as you hoped maybe make that change.

Burnt garlic isn’t black garlic. One is a slow Maillard reaction that makes sweet compounds, the other is bitter yuck.

Hold the dry noodles in the water above the strainer for a few seconds. They'll get soft and sit in the strainer instead of the straight noodles going through the strainer holes lol

Maybe roast your bones in the oven at like 450 for 45 mins to get a deep flavor out of them and boil them also maybe reduce your broth more for a deeper flavor
