ENSALADA RUSA 🥔  This vibrant and delicious potato salad is popular in many Latin American countries, each adding their own unique twists to the dish. The recipe below is the way my mama always made it for us and it consists of potatoes, carrots, green beans and beets that are then tossed in mayo, lemon juice, salt and pepper — it’s soooo good! Ensalada Rusa is many times enjoyed on special occasions, but this summer you’ll find me enjoying this at allll the carne asadas 😎 Hope you enjoy this recipe as much as I do! Like + save this post to make this Ensalada Rusa over the weekend! — Ensalada Rusa 6 servings 20 minutes 4 yellow or red potatoes, cut into small chunks 2 medium carrots, cut into small chunks 1 lb green beans, trimmed and chopped into 1/2” pieces 2 pre-cooked beets, cut into small chunks 1/2 white onion, finely chopped Juice of 1 lemon 3/4 c of mayonnaise 1 tsp salt or to taste 1 tsp pepper or to taste — Bring a large pot of salted water to a boil and cook the potatoes for about 10-12 minutes, or until fork tender. Remove the potatoes from the pot and immediately place them in an ice bath. Next, boil the carrots and green beans for about for about 5 minutes, then place them in the ice bath also. In a medium-sized mixing bowl, toss together all of the ingredients until thoroughly combined.
