Mushroom based protein is my favorite! Quorn has been around for several years and their chicken substitute has an incredible texture and flavor. I’m really excited about the oyster mushroom option you discussed. I’ve been a vegetarian for 21 years, but I still get excited when new plant proteins come out. In 2004, I basically only had Boca Burgers and Morning Star products. Now my store has a quarter of a frozen food aisle dedicated to plant-based proteins.
