I made and canned peach jam for the first time yesterday and they came out cloudy like that! Thank you so much for explaining because I thought I just did something wrong. I will definitely add vinegar next time!

Hard water is water with a lot of minerals in it, when you boil hard water it leaves the minerals behind. The minerals will stay on the jars, lids. The vinegar stops those minerals from adhering to the jars / lids

I use to use vinegar but I now add a tablespoon of cream of tartar and it works wonderful.
