As a reader, if I read your work and can pinpoint EXACTLY what book/author you got it from, that’s bad!!!! Aim for a combo of two works. Just choosing one can become unintentionally too similar

Lord Snow :
If you’re not able to make a plot your own, no matter how inspired, you are not a good storyteller. Not necessarily a bad author if you are good at the mechanics of it, but definitely a bad storyteller.

I think plagiarism is copying beat for beat with too similar of characters. Inspiration is using archetypes and tropes but subverting it so it fits your story. The thing is that there is no such thing as and 100% original idea and it’s totally okay to take inspiration from archetypes. There’s a reason why some of them are so popular and works. (TLDR) inspiration can come from multiple facets. Character, archetype, trope, dynamic, setting, genre, etc. plagiarism is more flat out copying another piece of work.

It's Plagiarism when you take a story and make it a 1-1 copy. Like everything: The settings, characters, plot. Basically if you can take the story and just swap names, it's Plagiarism.
Inspiration is when you take a story premise and add your own spin on it.
Example: Pyramus and Thisbe inspired Romeo and Juliet which inspired the Lion King 2.
They all have the same premise: 2 people fall in love, but are forbidden by their families. P&T and R&J end similar with them dying, while LK2 ends with them living happily ever after (bc Disney). While they have the same plot, each story has its own spin on it.

I think it's theme and plot. is the plot an exact copy of the other book, do the charactors have there own development and personalities, and is the theme of your story the same. if not then I think your good.
