Chicken Tikka Biryani Recipe. Ingredients For Chicken Tikka Marinade: • 1 kg chicken legs (cut into pieces) • ¾ cup yogurt • 2 tosp ginger-garlic paste • 2 tosp red chili powder 1 tsp chili flakes • 1 tsp turmeric powder • 2 tosp cumin powder • 2 tbsp coriander powder • 1 tsp black pepper • 3 tosp tikka masala (any brand) • 1/3 tsp nutmeg powder • 1 tsp salt (adjust to taste) • Charcoal piece (for smoke) For Rice: • 3 cups basmati rice (soaked for 30 minutes) • 6 cups water • 1 tsp kewra water • 2 tbsp oil • 1 ½ tsp salt For Biryani Masala: • 2 onions (thinly sliced) • Marinated chicken • 3 tomatoes (chopped) • 1 cinnamon stick • 2 black cardamoms • 4-6 green cardamoms • 2 star anise • ½ tsp whole black pepper • 1 small piece of javitri (mace) • Handful of coriander leaves (chopped) • Handful of mint leaves (chopped) • 4-6 green chillies • ¼ cup milk mixed with ½ tsp food color Instructions Step 1: Marinate the Chicken Mix yogurt, ginger-garlic paste, spices, and salt. Add chicken, coat well, and marinate for at least 2 hours (overnight for best results). Step 2: Cook the Chicken Heat oil, fry onions until golden, then add whole spices. Add marinated chicken and cook until the water dries. Add tomatoes and leftover marinade, cook until soft and oil separates. Smoke the chicken with a heated charcoal piece for extra flavor. Step 3: Cook the Rice Boil water with salt and oil. Add soaked rice and cook until 80% done. Drain and set aside. Step 4: Layer the Biryani In a pot, layer chicken masala, followed by half of the rice. Sprinkle coriander, mint, green chilies, and colored milk. Repeat with the remaining chicken and rice. Step 5: Dum Cooking Cover with a tight lid or seal with dough. Cook on low heat for 10-15 minutes. Let it rest for 10 minutes. Step 6: Serve Gently mix the biryani and serve hot with raita, salad, and lemon wedges.
