Heat oil in a deep pot to 375°F. 2. In a bowl, toss the wings with cornstarch, garlic powder, salt, and pepper until evenly coated. 3. Fry the wings for 10–12 minutes, or until crispy and golden brown. 4. Meanwhile, make the glaze: In a saucepan over medium heat, combine peach preserves, brown sugar, chipotle, honey, vinegar, salt, and pepper. Stir until smooth and slightly thickened. 5. Remove the wings from the oil, drain briefly, then toss immediately in the warm peach-chipotle glaze. 6.
