This lamb tagine is pure comfort in a bowl 🍲✨  Slow-cooked to perfection, rich, hearty, and full of warming spices. One of my all-time fave stews..here’s how to make it🥰 Lamb marinade: - 1 to 2kg lamb cubes - 1/2tbs Ras el Hanout  - 1/2tbs Baharat seasoning  - 1tbs grounded coriander  - 1/2tbs cumin - 1tbs paprika  - 1/2tsp ground tumeric - 1tsp lebanese spice  - 1tsp ground ginger  - 1/2 tsp Cinnamon  - 3 cloves crushed garlic  - Salt and pepper  - Drizzle of olive oil for marinade  Tagine: - 1 or 2 large onions, finely sliced - 4 garlic cloves, crushed - 2tbs tomato paste  - 1 cinnamon stick - Handful of prunes, pitted and apricots  - Juice of 1/2 lemon  - 4 crushed cardamom pods - 1 cup of chicken stock  - Corn starch to thicken - 10 saffron threads Garnish:  - fresh parsley  - Almonds or pistachios  Steps: 1. Marinade the lamb with the marinade ingredients and leave overnight or for atleast a few hours. 2. If you have a clay tagine pot use it and if not you can use a cast iron or stainless steel pan as an alternative. Fry over the onions with a drizzle of coriander, Bharat and Ras El Hanout.. stir until soft and slightly golden.. then add in the garlic along with the lamb and a cinnamon stick. Sear over the meat and then add the prunes, apricot, chicken stock and lemon juice. In a bowl add a cup of chicken stock, 2tbs tomato puree, saffron, lemon juice, crushed cardamom, 2tbs chopped parsley and corn starch. Add to the pan and simmer on a low heat until the sauce reduces and thickens and then place a lid on and cook until the is tender (around 2 hours). Serve with almonds, or Pistachios and you can also serve with parsley.  3. I made the meal with couscous and salad. You can also make this dish with chicken or beef.
