Not bread… make my cheese and bacon potato cakes instead! Episode 3 of my series for the gluten free babes, so that we can stop yearning after bread. These simple 5 ingredient potato cakes are my new obsession, fully plant based and easy to prep for the week ahead 🫡 Makes 6 800g white potatoes 150g bacon lardons (I used La vie) 70g cheese, grated (I used vegan cheddar) 2 tbsp cornflour Handful chopped chives Li 1/2 tsp garlic powder (optional) 1 tsp salt & black pepper 1. Start by peeling the potatoes and chopping into 2 inch pieces. Add to a saucepan of water and bring to the boil. 2. Boil for 15 min until the potatoes are fork tender and drain fully. Leave to steam dry. 3. Whilst the potatoes are drying, fry off the bacon in a little oil until crispy, for around 5 minutes. Remove from the pan and set aside. 4. Add the potatoes into a mixing bowl and roughly mash, then add the remaining ingredients into the bowl. 5. Mix to incorporate and then split into approximately 6 portions (each patty is around 3 tbsp of mixture). Roll into burger patty shapes with your hands. 6. Add a little more oil into the same frying pan you cooked the bacon in and place on a medium heat, add the patties into the pan and cook for 3-4 minutes on each side until golden brown.
