Butter Chicken with garlic naan is a weekly fave😮‍💨✨🥘 Here’s the full recipe👇🏽: For the chicken marinade: 500g chicken breast, cut into bite-sized chunks 2 heaped tbsp Greek yoghurt 1 tbsp lemon juice 2 tsp garam masala 1 tsp turmeric 1 tsp ground cumin 1 tsp paprika 1 tsp salt For the sauce: 2 tbsp unsalted butter 1 tbsp olive oil 1 large onion, finely chopped 1-2 bay leaves 3 tsp garlic puree 1 tsp ginger puree 1tbsp tomato puree 2 tsp garam masala 2 tsp ground coriander 1 tsp ground cumin 1 tsp paprika ½ tsp chilli powder 400g tin chopped tomatoes 30g cashews (optional) 1 tsp honey 120ml double cream 1 tsp salt (or to taste) Fresh coriander, chopped Method 1. Marinate chicken: Mix marinade ingredients, coat chicken, and refrigerate for at least 1 hour. 2. Cook chicken: Heat oil in a large pan, sear chicken until lightly charred 5-8 minutes (not fully cooked). Remove and set aside. 3. Make sauce: In the same pan, melt butter with oil. Add onion and cook until golden and caramelised. Add the bay leaves half way through 10-15 minutes, Stir in garlic and ginger puree for 1 minute. Add all spices and fry for 30 seconds. 4. Add tomatoes: Stir in tomato puree. Cook for 1-2 minutes before adding tomatoes, cashews, honey, and salt. Simmer 10 minutes. After 10 minutes blend the sauce to a smooth consistency. 5. Finish: Return chicken to the sauce, simmer 8–10 minutes. Stir in cream, cook 2–3 more minutes. Garnish with coriander. Cook on a hot non-stick pan for 1–2 mins per side until puffed and golden. 4.
