Just be nice in the comments.😅 ➡️ Recipe: Baked Mac & Cheese * 1 lb elbow macaroni * 3 tbsp butter * 3 tbsp flour * 1 cup heavy cream, warmed * 2 cups whole milk, warmed * 2 1/2 cups sharp cheddar, shredded, save 1/2 cup for topping * 1 1/2 cups fontina cheese, shredded, save 1/2 cup for topping * 1 1/2 cups mozzarella cheese, shredded, save 1/2 cup for topping * 1/2 cup parmesan cheese, grated * 1/2 cup pasta water Seasonings— * 1 1/2 tsp seasoned salt * 1 tsp dijon mustard * 1 tsp garlic powder * 1 tsp onion powder * 1 tsp smoked paprika * 1/2 tsp cayenne powder * 1/2 tsp black pepper * 1/8 tsp nutmeg 1. Freshly shred all of the cheese. Set 1/2 cup of cheddar, fontina, and mozzarella aside for topping. 2. In a large pot, boil enough water to cook macaroni. Salt the water with 2-3 tbsp of salt. Bring to a boil and cook macaroni 3 mins less than instructions suggest. Reserve 1/2 cup of pasta water from the pot then strain the macaroni. Drizzle oil over the noodles and toss well so it doesn’t stick together. 3. Preheat oven to 375F. 4. Warm heavy cream and milk in the microwave for 30 secs-1 min and set aside. This helps with not breaking up the roux. 5. In a large pan and on medium-low heat, melt 3 tbsp of butter and add 1 tbsp of flour at a time (totaling 3 tbsp) to the butter and whisk until combined. Stir until roux turns lightly golden. About 2 mins. 6. On medium-low heat, slowly stream warm heavy cream and milk into the roux, while whisking continuously. 7. Once both the heavy cream and milk are combined and there are no more clumps, turn the heat off and add in a hand full of cheese at a time while whisking continuously to melt the cheese. Do this until all the cheese is incorporated and melted. Sauce should thicken and become smooth and cheesy. (We turn the heat off because if you over cook the cheese the sauce will become gritty) 8. Add all of the seasonings, dijon mustard, reserved pasta water to the sauce and mix well. 9. Add all of the macaroni to the sauce and mix well. 10. Pour it all into a baking dish. Spread evenly and top with remaining cheese. Bake in over for 15 mins at 375F and then broil for 5 mins on high. Remove from oven. Let it cool for 10-15 mins before serving.
