Golden and crispy on the outside, soft and melty in the center — cheese saganaki is one of the most beloved Greek meze dishes served in tavernas all across Greece. Made with a good semi-hard Greek cheese and finished with fresh lemon juice, it’s simple, rich, and incredibly delicious. Ingredients • 2 blocks semi-hard cheese (such as graviera, kefalotyri, kasseri, or halloumi) • 2/3 cup (160 ml) cold water with ice • 3/4 cup (90 g) all-purpose flour • Extra virgin olive oil, for frying • Fresh lemon juice, for serving • Fresh oregano or thyme (optional, for garnish) Instructions 1. Prepare the Cheese Cut the cheese into thick slices (about 1–1.5 cm / ½ inch thick). Dip each slice into the ice-cold water, then lightly coat it with flour, shaking off the excess. For an extra crispy crust, dip the floured cheese back into the cold water and coat once more with flour. 2. Fry Heat olive oil in a frying pan over medium-high heat. The oil should come up to about halfway up the sides of the cheese slices. Carefully place the cheese slices into the hot oil and fry for about 2 minutes per side, until deeply golden and crispy on the outside. 3. Serve Transfer the saganaki to a plate lined with paper towels for a few seconds to absorb excess oil.
