But like most dishes I cook, the more I made it, the easier it became. Living in Japan is the first time I’ve eaten something cold in summer that isn’t sweet or a dessert — and now it’s one of our favorites. Macros per 1 serving: Calories: 284 kcal Protein: 24 grams 4 Servings Ingredients: Maruchan Hiyashi Naman Ramen (冷し生ラーメン) - 2 packs (comes with the soy sesame sauce) 2 cucumbers 1 big tomato 2 boiled chicken thighs 2 eggs - thin omelette Instructions: - Wash and slice the cucumbers and tomato. - Boil the chicken thighs, then shred them. (Using two forks works better than the hand-mixer hack, unless you’re using chicken breast, which shreds more easily.) - Cook the noodles according to the package instructions. Once done, place them in an ice bath or rinse under cold running water. Drain well, transfer to a bowl, and mix in the sauce. - Whisk the eggs. In a non-stick pan, lightly grease with a thin layer of oil (spread it evenly with a paper towel). Pour in the eggs and spread evenly. Cook on low heat until set, then let it cool slightly. - Once cooled, fold the omelet in half, then in half again. Stack if needed, and slice thinly into strips. - Assemble the cold noodles: top with cucumber, tomato, shredded chicken, and omelet strips. Enjoy!
