@on_todays_bake: Whey bread recipe Ingredients 3 cups (360 g) bread flour ¾ cup (180 ml) whey – lukewarm 1 large egg 1 packet yeast , 7 g 1 tbsp sugar or honey 1 tsp salt 2 tbsp (28 g) butter (soft) or oil Optional: 1 extra beaten egg for brushing the top Method Mix wet base In a bowl, whisk whey, egg, sugar, and yeast. Add dry ingredients Stir in flour and salt until a rough dough forms. Knead Add butter/oil and knead until smooth and elastic (8–10 min by hand or 5 min in mixer). Dough should be soft but not sticky (add 1–2 tbsp more flour if needed). First rise Place in an oiled bowl, cover, and let rise 1–1.5 hours until doubled. Shape Punch down, form into a loaf, and place in a greased loaf pan (or shape into a round/oval on a tray). Second rise Cover and let rise again 30–45 min until puffy. Bake Preheat oven to 170 °C Brush with beaten egg if you like a glossy top. Bake 25–30 min until golden brown and it sounds hollow when tapped underneath.
