Flaky, buttery layers of msmen loaded with juicy burgers, melty cheese, and a punchy sauce; it’s crispy, soft, and totally addictive. A bold twist that takes the burger game to the next level! DOUGH 400 g flour (all-purpose flour) 6 g salt (1 teaspoon) 25 g unsalted butter 12 g honey 215 ml lukewarm water GROUND BEEF 400 g ground beef 3 g salt (½ teaspoon) 1 g black pepper (⅓ teaspoon) cheddar cheese SAUCE 125 g mayonnaise 25 g mustard 30 g ketchup 25 g pickles 10 ml pickle juice SERVE WITH lettuce sauce pickles EXTRA sunflower oil (for greasing) Put the flour and salt in a bowl. Add the butter, honey, and water. Knead for 10–12 minutes until smooth. Cover and let it rest for 30 minutes. Divide the dough into 10 equal pieces of about 65 g each and shape them into balls. Grease your hands with oil and take one ball of dough. Press it flat on a greased surface (about 30 ml oil). Cover and let it rest for another 30 minutes. Grease your work surface again with oil (about 15 ml per msmen). Spread the dough out with your fingertips into a very thin sheet, about 38 × 33 cm. Keep your hands oiled to prevent tearing. Use a pizza cutter to make 6 small cuts along the edges to make folding easier. Fold each sheet of dough. Place the msmen on a greased baking sheet. Cook the msmen in a skillet over medium heat until golden brown and cooked through on both sides. Put the ground beef in a bowl. Add the salt and black pepper. Mix well. Take a portion of the beef and flatten it with your hands. Place the patties on a sheet of baking paper, cover with another sheet, and press flat. Repeat until all patties are shaped. Cook the patties in a skillet over medium heat for 1 minute on one side. Flip, place a slice of cheddar cheese on top, and cook for another minute. Mix the mayonnaise, mustard, ketchup, grated pickles, and pickle juice in a bowl until well combined. Open the msmen and fill with sauce, burgers, pickle slices, and lettuce. Bismillah, enjoy! Tips: Use lukewarm water, as it makes the dough more pliable and helps it rest faster. Knead the dough well. The longer you knead (10–12 minutes), the more elastic it becomes, making it much easier to roll out. Oil is your best friend when making msmen. Keep your hands and work surface well-greased to avoid tearing. Flatten the burgers using baking paper. Don’t cook the burgers too long. Since they are thin, 1 minute per side is enough. Otherwise, they will dry out. Add tomato slices, onion, or jalapeño for more variation. You can also make the msmen ahead of time and freeze them. Cook them briefly, let cool, and freeze. Before using, reheat in a dry skillet. Super handy for a quick meal.
