Preheat oven to 325°F. Line a 12-cup muffin tin with non-stick liners. 2. In a large bowl add the eggs, salt, pepper, and heavy cream. Using a hand mixer, beat for about 1-2 minutes until well combined. 3. Stir in the cheddar, bacon bits, and spinach until evenly mixed. 4. Pour the mixture evenly into the muffin cups, filling about 3/4 full. Top with more cheese and bacon. 5. Place a roasting pan filled with hot water on the bottom rack of the oven.
