But I like to stick to beef cheek for that silky, sticky bite that’s packed with flavor 😮‍💨 ⏳ Fair warning though, it’s a labor of love. This beauty takes about 6 hours to cook low and slow, so plan ahead (even better if you make it a day before your big meal) 🥩 Beef cheek = flavor gold… but also shrinkage. 3–3.5 lbs feeds 2 as tacos, but 5–6 lbs made me a dozen tamales and 2 tortas de barbacoa.
