A quick, easy and simple  gluten-free savoury pancake recipe for you ….. Pudla – crispy edges, soft centre, and bursting with flavour! 🌿  These Pudlas are made with chickpea flour (besan) and are so easy to make! From sieving the flour to flipping the pancake, watch every step and learn how to create this delicious dish that’s perfect for Pancake Day—or any day. 😋 These are incredibly versatile—perfect for any meal! Naturally gluten-free and a great source of plant-based protein. 💛 Try them with chutney, stuff them with Bombay potatoes, or enjoy them as they are! Gujarati Savoury Pancake 300g Chickpea Flour (besan) 500ml water (luke warm) 1 teaspoon salt 1/2 teaspoon ground turmeric 1/4 tsp ground black pepper 1 fresh finger green chilli, finely chopped 4 cloves garlic ,grated 4g ginger (washed throughly and grated) 2 tablespoons chopped coriander leaves and stalks (optional) 1/2 tsp baking powder Coconut oil for cooking (or unsalted butter) To Make: Put the besan flour into a bowl, add salt, turmeric, black pepper, chopped green chilli, grated garlic & ginger, chopped fresh coriander (optional)  and mix in the warm water using a fork to create a smooth batter.  Similar consistency to double cream. Alternatively add all the ingredients and 400ml water into a blender or nutri bullet and blizt to a smooth batter, then gradually add the remaining water to get correct consistency. (not too runny). Stir in 1/2 tsp baking powder. Heat up your frying pan using medium heat to get the pan really hot. Add a teaspoon of butter or coconut oil or olive oil (or your preferred choice of oil) Pour a ladleful of the batter or 4 tablespoons onto the pan and spread it gently in a circular motion to form a thin pancake like shape. Cook the pudla on medium heat for 2-3 minutes or until the bottom side turns golden brown.  Drizzle a little oil around the edges. Flip the pudla carefully using a spatula and cook the other side for an additional 2-3 minutes until it turns golden brown and cooked through. Remove the cooked pudla from the pan and place it on a plate. Repeat the process with the remaining batter to make more pudlas. Serve the pudla hot with chutney, yogurt, or any preferred accompaniment. It can be rolled up or folded before serving. Enjoy your  pudla! You can  customise  the recipe by adding other vegetables, spices, or herbs. If you have any left over pudla’s store in an airtight container in the fridge, they are great to freeze as well.
