Emphasis on “HE’d” never heard of because gomasio has been used for centuries in Japan and is pretty widely available. However, to the uninitiated, it is shockingly potent. This recipe came up recently when we made a grilled corn recipe, basted in butter and coated in a few seasonings—the revelation of this recipe was the salt, a mix of sesame seeds and salt toasted together, then crushed. The flavor is toasty and nutty and deep, powerful enough to season most hefty vegetables or chicken and call it a day. We tested toasting the seeds separately, then grinding with salt. Heating the salt and seeds together made a substantial difference in flavor.
