@fitmittenkitchen: Your new favorite no-bake treat is here — Frozen Chocolate Covered Cheesecake Bars made with Country Fresh Dairy Cottage Cheese! Think cheesecake meets vanilla ice cream bar... and yes, they’re as dreamy as they look. 😍 The 4% milkfat cottage cheese makes for a perfectly creamy treat – don’t skip it! Each bar has about 4 grams of protein. Perfect for snack time, dessert time, or literally anytime. My personal favorite is when my children like to ask for them at 9am.  Save + share if you're obsessed with easy, nutritious indulgence 💯 Here’s how to make them!  Ingredients 1 cup Country Fresh Dairy Cottage Cheese, 4% milkfat 3 tablespoons honey 1.5 tablespoons sweet cream coffee creamer (or half & half) 1 tablespoon cream cheese (optional) ¼ teaspoon fresh lemon juice ¼ teaspoon vanilla extract 1/2 cup chocolate chips + 1 tablespoon coconut oil 1 graham cracker square + 1/4 teaspoon softened butter Directions 1. In a blender cup or small food processor, add Country Fresh Cottage Cheese, honey, creamer, cream cheese, lemon juice and vanilla extract. Blend until smooth, about 20-30 seconds. 2. Evenly distribute mixture into popsicle molds, cover and freeze for at least 5 hours, or overnight. 3. Once the cheesecake bars are fully frozen, melt chocolate chocolate chips in a microwave-safe bowl on 50% power for 1 minute. Add coconut oil, stir and melt again on half power for another minute. Stir and microwave on half power for 45 seconds, stirring until fully melted.  4. Crumble a graham cracker with your hands and mix with softened butter. 5. Remove popsicles from molds and place on a lined baking sheet. Carefully cover the popsicle with the melted chocolate (use a spoon and move quickly – chocolate sets fast) and sprinkle some graham cracker crumbs on top. Repeat this process, one popsicle at a time. You can enjoy right away or place the tray back in the freezer until you’re ready to serve them. You guys will love these!
