We don't have this problem with fresh mozzarella in Italy, why do you have it? That mozzarella also seems a lot less wet and has a ton less preservation liquid than the ones in our supermarket. Shouldn't that liquid evaporate/blend with the sauce in the oven like ours do?

That's barely does anything, I've left it to dry for literal hours before, tried to squeeze the water out... pointless, there's far too much water in there. You need low moisture cheese unless you tou have a proper Neapolitan-capable oven with enough heat to vaporize all that water in under 2 minutes. Besides, since when is NY style made with fresh mozzarella? 🤔

I slice it, put it in between paper towel sheets on a plate, and then another plate on top for an hour or more. Sometimes I'll put a can on it if I'm going to also use veggies as a topping.
