3-5 Boiled Eggs, peeled
2 tbsps oil or ghee
3 green cardamoms
4 cloves
1 piece cinnamon
1 onion, finely chopped
1 tsp each ginger and garlic paste
1 tsp kashmiri chilli powder
1/3 tsp turmeric
1 tsp coriander powder
1/2 tsp cumin powder
1 tin chopped tomatoes or 3-4 ripe chopped tomatoes
Fresh coriander
2 tbsp yoghurt (optional)
1/2 tsp garam masala
Heat 2 tbsp oil or ghee.
Add 3 cardamoms, 4 cloves, 1 cinnamon stick — fry till aromatic.
Add 1 chopped onion. Sauté till golden.
Stir in 1 tsp each ginger and garlic paste. Cook 1 min.
Add 1 tsp Kashmiri chilli powder, 1/3 tsp turmeric, 1 tsp coriander powder, 1/2 tsp cumin powder. Fry for 30 sec.
Tip in 1 tin chopped tomatoes (or 3-4 fresh). Cook till thick and jammy.
Whisk in 2 tbsp yoghurt (optional).
Finish with 1/2 tsp garam masala and fresh coriander.
Add the eggs, coat in the curry, cover and cook for 2-3 minutes on low.
This egg curry is quick, hearty, and absolutely banging with a hot roti or rice. Go on and make it this weekend.
