might be a weird idea but I'd be tempted to keep the thinner cabinet and install it in the pantry or a cupboard as like hidden storage for paperwork or something

You can return the cabinet to Ikea you just have to dismantle it and take it back.

Had the same problem with my build in closet 🤣 ended up taking a side panel out and drilling holes for attaching the planks🙈🙈

Yesss! Im so glad you worked it all out, you are doing so well with this:) please just be careful with only having a 20cm gap between the gas hob and the larder as it is under regulation. I advise that you install an extractor hood and you should be okay.
