Clean out the fridge dinner 🍴 Makes 4 servings Ingredients sheet pan: - 1 bag (about 12 oz) shaved Brussels sprouts - 2 bell peppers, sliced - 5 uncooked Italian chicken sausages (Trader Joe’s), kept whole marinade: - 3 tbsp olive oil - 1 tbsp Dijon mustard - Juice of 1 lemon - 1 tsp Italian seasoning - 2 cloves garlic, minced - 1/2 tsp salt - 1/2 tsp black pepper - 1/2 tsp paprika - 1/2 tsp onion powder Optional for serving: - Cooked rice - Toom garlic dip - Sliced avocado Instructions 1. Preheat oven to 400°F. 2. Place shaved Brussels sprouts, sliced bell peppers, and whole chicken sausages directly on a large sheet pan. 3. In a small bowl, whisk together olive oil, Dijon, lemon juice, Italian seasoning, garlic, salt, pepper, paprika, and onion powder. 4. Pour marinade evenly over the sausages and veggies. Toss veggies gently to coat everything well. 5. Spread into a single layer. 6. Bake for 25-30 minutes, flipping sausages halfway through, until sausages are cooked through and veggies are tender. 7. Serve as is or over rice. Top with toom garlic dip and avocado if desired.
