@jawaamerika: 🍔 Same-Day Sourdough Slider Buns (24 mini buns) Ingredients: • 240 g active sourdough starter (100% hydration, fed and bubbly) • 500 g all-purpose flour (or bread flour) • 100g whole milk (room temp) • 200g water (room temp) • 40 g honey • 50 g unsalted butter, softened • 12 g salt • 2 eggs (for dough) • 1 egg (for egg wash) Steps: 1. Mix Dough • Combine starter, milk, water, sugar, egg, and flour. Mix until shaggy. • Add salt + butter, then knead until smooth and elastic (10–12 min by hand or ~8 min with mixer). 2. Bulk Fermentation (3–4 hours) • Cover bowl and let dough rise at room temp until puffy and almost doubled. • Optional: Do 2–3 stretch & folds in the first 90 minutes. 3. Shape Buns • Divide dough into 12 equal pieces (~50 g each). • Shape into tight balls and arrange on parchment-lined baking sheet. 4. Final Proof (2–3 hours) • Cover with damp towel and let rise until the buns look airy, soft, and slightly domed. 5. Bake • Preheat oven to 375°F (190°C). • Brush with egg wash, sprinkle sesame seeds. • Bake 18–20 minutes until golden brown. 6.
