@nooks.cooks: How to Cook Kare Kare Kare kare is one my favorite Filipino dishes. Really. This time I mean it. It’s one that feels and tastes special every time I eat it. The only real downside about the dish is the ever increasing cost of oxtail since people caught on how good it is. In this version I use a pressure cooker to speed up cooking the oxtail, and I use peanut butter instead of grinding up peanuts and rice as thickener on my own. One day I’ll try cooking with peanuts from scratch. That’s not the purpose of these videos. I want to make these as accessible as possible, and most people can buy peanut butter. I digress. Kare Kare is decadent. Kare Kare is rich. If I had to make a power ranking of Filipino food, Kare Kare will always be a the top. Invite you to try it for yourself and experience one of my all time favorites. Unless you have a peanut allergy, I’d be surprised if you were disappointed. Enjoy! Prep time: 15 - 30 minutes Cook time: 1.5 - 2 hours Total time: 1.5 - 2 hours - 6 pounds oxtail - enough water to cover the oxtail - 2 onions, 1/2 diced, the remaining onion in halves - 4 - 6 cloves garlic, minced - 3 Asian eggplants, 1/4” thick pieces cut at an angle - 1 - 2 pounds long beans, cut to 1 - 1 1/2” pieces - 1 - 2 pounds baby bok choy, leafy greens separated from stalks - 8 - 10 cups peanut butter, ~ 1.5, 48 ounce jar of peanut butter, add until your desired broth thickness is reached - 1 tablespoon annatto powder for coloring Kosher salt for seasoning Served with steamed white rice & a side of bagoong (fermented shrimp paste) Equipment: Pressure cooker (optional), immersion blender (optional) * Shoutout to @Jowjowcooks for the idea of using pasta baskets to neatly cook the vegetables #karekare #oxtail #filipinofood #filipinocuisine #recipes
