Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper. 2. In a bowl, mix the flour, baking soda, and salt. Set aside. 3. In a separate bowl, combine the melted butter, brown sugar, granulated sugar, egg, and vanilla extract. Whisk for 1-2 minutes until a smooth paste forms. 4. Combine the dry ingredients into the wet batter and gently fold until just combined. 5. Add the chocolate chips and mix with a spatula. Do not overmix. 6. Arrange the graham crackers on the prepared baking sheet. Top each cracker with a chocolate wafer, a few mini marshmallows (or one large marshmallow), and a spoonful of cookie dough. 7.
