Day 13/100 of my 100 Days Straight of Recipes Series Chapter: Hummus Recipe: Fried Chicken Hummus + Date Salsa Verde INGREDIENTS: -Hummus (my recipe can be found on my page!) -Chicken thigh (4, boneless, skinless) -Buttermilk (approx. 2 cups) -All purpose flour (2 cups) -Ras El Hanout (1tbsp) -Smoked paprika (1/2tbsp) -Crushed red pepper (1tsp) -Salt and pepper -Neutral oil (for frying) Date Salsa Verde: -Parsley (2 heads) -Cilantro (1 head) -Medjool dates (10, pitted) -Garlic (2 cloves) -Lemon juice (from 1 lemon) -EVOO (1/4-1/3 cup) -Salt and pepper (to taste) INSTRUCTIONS: Cut the chicken into small pieces. Add to a large bowl with about 1tsp of both salt and pepper, and then fully submerge in buttermilk. Mix to combine. Cover and place in the fridge for at least 1 hour to marinate. For the date salsa verde: add the parsley, cilantro, garlic, and lemon juice to a food processor. Pulse for about 30 seconds until the herbs begin to break up a bit. Add the dates and olive oil to the food processor and blend until fully combined but still slightly chunky. Add in salt and pepper to taste and pulse to combine. This should be a bit chunky, not fully smooth. In a shallow bowl, combine the flour, ras el hanout, smoked paprika, crushed red pepper, salt, and pepper. Pull the chicken out of the buttermilk, letting the excess drip off. Drop the chicken into the flour mix and fully coat, pressing the flour into the chicken to ensure a good and even layer.  Let the coated chicken sit for about 15 minutes to set.  In a deep pan or dutch oven, heat the oil to 350 degrees. Add in the chicken pieces (making sure not to overcrowd the pan), and fry until golden brown and/or the internal temperature reaches 165 degrees.
