This hearty, humble soup recipe comes from Grandma's Wartime Kitchen, a cookbook filled with recipes from an era when families had to make every bite count. You will need: 1/2 pound of ground beef 1 C chopped onion 1 C chopped bell pepper 6 C of broth or water 1 C each, carrot, celery, mushrooms, peas, and corn Season to taste with salt and pepper I started by browning 1/2 a lb of ground beef in a large pot. Just a small amount, but that's often all that was allowed under wartime rationing. Once it was cooked through, I added 1 cup of chopped onion and 1 cup of chopped bell pepper and let those caramelize to build some extra flavor. Then I poured in 6 cups of water because broth wasn't always available or affordable back then. But if you've got stock or bouillon on hand, it's a great way to boost the flavor. In goes 1 cup each of celery, carrots, mushrooms, peas, and corn. These were all vegetables that families may have had in a home garden or preserved from earlier in the season. Bring it to a boil, then simmer for 10 minutes until the vegetables are tender. Season it simply with salt and pepper. I served it with a slice of overnight crusty bread, which soaked up the broth without falling apart. It's the perfect match for a soup like this. A recipe this humble really makes me appreciate the simplicity of the ingredients and the resilience of the folks who cooked it.
