In a saucepan over medium heat, add the sugar. Stir constantly with a heatproof spatula or whisk as it melts into a golden liquid (it will clump first, then smooth out). 2. Once fully melted and amber-colored, carefully add butter. It will bubble up. Stir until fully combined. 3.  pour in the heavy cream while stirring. Again, it will bubble vigorously. Keep whisking until smooth. 4. Remove from heat, stir in sea salt.
