SO easy to make and packed with immune boosting goodness. RECIPE: 1 cup of organic dried elderberries 2 cups water 1-2 cinnamon sticks (optional) 1tsp ginger (optional) Bring to a boil and then simmer for 30 min. Turn off heat and let steep for 1 hour Use cheesecloth to strain out the liquid Add 1/2 cups of honey Put back on the stove to heat up to low temp Add gelatin or agar-agar per package instructions Simmer for 2-3 minutes Fill your gummy molds and put in the fridge for 1-2 hours until firm. I wouldn't add the honey until the mixture with gelatin is cooled down but warm enough to melt honey and still get in molds before it sets. the honey is useless once heated it kills all the good stuff

I really wish there was a way to do this without the high heat. Even the simmering temperature of 180 to 200°F is way above the 130°, where the anthocyanins, the most active component (very powerful antioxidant) in elderberry's starts to break down. By the time the elderberry and water mixture hits the boiling point you have lost almost all of that component.And that's a good 50% of elderberry's potency.
