Pour in chicken stock (250ml water + ½ stock cube or fresh stock) and stir for 3-4 minutes until thickened. 5. Add frozen veg, simmer for 3-4 minutes, then stir in double cream and Parmesan (optional-I just had some to use up and thought it was a great addition). Remove from heat. Adjust thickness to personal preference with more stock or longer simmering. 6. Let the mixture cool completely. 7. Line a cupcake tray with circular puff pastry, tucking it in. Line with baking paper first if the tray isn’t non-stick. 8. Fill each with 1-2 tbsp of cooled chicken filling just below the top of the pastry (do not overfill otherwise these will leak in the oven) cover with a smaller pastry round and seal by pinching and folding the edges. 9. Make slits, brush with egg yolk, and bake in a preheated oven at 180°C for 20 minutes. 10.
