RECIPE serves 8 (or 4.5 Samoans) 1 pumpkin (approx 2.7 kg) 2 tomato 1 large potato 4 cloves of garlic 2 celery stalks 1 large onion ⅓ C olive oil (or any oil) 750ml - 1L vege/chicken stock 1 tbsp garlic powder 2 tsp coriander 2 tsp onion powder Salt & pepper to taste ½ Cup of cream for serving (or coconut cream) -Preheat oven to 200 Celsius on bake setting -Peel & roughly chop pumpkin, tomato, potato and add to a baking dish. -Pour olive oil over vege & season with salt & pepper -Put in oven to roast for about 35-45 mins til very tender when poked with fork -While vege in the oven, chop your carrots, celery, onion & garlic into smallish pieces  -Heat oil in a large pot & fry carrots, celery and onion for 5-8mins on medium low heat til softened. If it begins to stick to the pot add 1-2tbsp of stock or water to deglaze (get sticky bits off bottom of the pot, not bottom of your bottom) -Add garlic & fry another 1 minute -Remove from heat until oven veges are ready -Bring pot back up to med low heat, & add oven vege to the aromats (celery, carrot etc) -Add seasonings (you can also experiment here & add others than what I’ve listed!) -Use a stick blend til smooth(ish) & add abt 750ml of chicken/vege stock. If you dont have liquid stock you can use stock cubes dissolved in boiling water (follow pack instructions for ratios). If you don’t have stick blender you can mash instead but consistency will be chunky. Dont mash on your cooktop!  -Season with salt & pepper and mix again -If soup is too thick, add more stock.
