Crispy Healthy Mediterreanean Chicken Cutlets These chicken cutlets are one of my favorite healthy weeknight meals. Super satisfying, baked in the oven with lowcarb breadcrumbs (you can use regular breadcrumbs or even crushed cereal if you prefer. The key is to tenderize the chicken by pounding it down to be thin, so it cooks more evenly and quickly. And goes amazing well with this mediterannean salad and some crumbled or shaved feta. Top it with lemon zest and juice, and it tastes like the best of summer. Here’s how I made it: 1.Preheat your oven to 400F. 2.Take 2-4 chicken brsts and use a meat tenderizer or back of a knife to pound them just a bit until thin. 3.Set two bowls or plates. Crack 2 eggs in one plate and whisk well. In the second, add 1 to 1.5 cups of your favorite breadcrumbs. Any Italian-style breadcrumbs work if you’re not lowcarb. I used @realphatfoods lowcarb Italian crumbs, but pork rinds also work if you are watching your carbs closely. 4.Dip each side of the chicken in the egg mixture then coat with breadcrumbs  5.Lay the coated pieces on a cookie sheet with an oven rack. This is key so the air can circulate well. Spray with avocado oil.   6.Pop into the oven for 30 minutes Bake for 30 minutes, or until internal temp is 165F. 7.While thats in the oven, make a quick salad with 3 diced Persian cucumbers, 1/2 small red onion, 4-5 tbsp kalamata olives, and 1/2 green pepper or 2 jalapeño peppers finely diced. Key here is finely diced! Drizzle with 2 tbsp olive oil, the zest and juice of a lemon, 1 tsp oregano, salt, and pepper. Toss and set aside. 8.Remove chicken from oven, top with a few spoonfuls of the salad, some fresh lemon juice, and enjoy. This would be great with some regular rice, brown rice, quinoa, or if you’re lowcarb, my kaizen lowcarb rice would be amazing here too!
