You are not glucose intolerant. If you were your glucose would have shot up way more than 33 mg /dl for a Cup of rice which containts approximately 52 grams of carbohydrates

Whenever I got T1D I did this because I thought it made sense. It really does help with the spike but I’m insulin dependent so my experience is quite different than yours.
