This is a very informative video but Novelty cakes should taste exactly like a dessert cake. Dessert cakes aren’t really fussy on presentation, they are mostly covered with soft frostings like whipped cream or mousses while novelty cakes are theme based cakes. Moist sponges/ soft sponges can be used on novelty cakes provided that they have been baked prior and given time to set so they can withhold the pressure of buttercream/fondant.

the taste, moist and texture should be the same , the only thing that will differ is the finishing of the cake. Also we use supportive structure to ensure the cake doesn’t collapse.

I beg to differ sisi, I use the same recipe for my novelty cakes as my dessert cakes. It’s all about structure! If you master the structure then you’re good to go. There is no difference between the two. You can’t give a client a dense bread like cake because you want it to look pretty, it does not make sense, certainly not to me 🫠
