Chinese Braised Pork Belly That Melts in Your Mouth Ingredients: 1 kg pork belly ¼ cup white sugar 3 tbsp soy sauce 3 tbsp Chinese cooking wine, divided 3–4 slices ginger 2 spring onions ½ tsp ground white pepper 2–3 cups warm water ½ tsp salt, if needed 1 tsp cooking oil Full recipe: Place the whole piece of pork belly in boiling water with half of the spring onion, half of the ginger and 1 tablespoon of cooking wine. Boil for 5 minutes, then remove and cut into 2–3 cm pieces. Add 1 teaspoon of oil to a wok. Place the pork skin-side down and sear over high heat for 1 minute. Turn and sear the remaining sides for 20–30 seconds each, then remove. Add ¼ cup of sugar to the wok. Cook over low heat, stirring continuously, until it melts and turns a deep caramel colour. Return the pork to the wok. Add the remaining spring onion and ginger, then stir-fry until every piece is coated in the caramel. Once it reaches pressure, reduce the heat and cook for 15 minutes. Pour the pork back into the wok and remove the aromatics. Simmer over medium-high heat until the sauce becomes thick and glossy. Taste and add up to ½ teaspoon of salt if needed.
